This one is a specialty of Hollick and something that’s a bit unique. Most sparkling red in Australia is composed of shiraz of course, but merlot lends itself ideally to the style. The bright fruit and savoury backbone of the variety, especially when sourced from Coonawarra, makes for a vibrant fizz. On the front, the fruit is intense and energising, and merlot’s inherent softness makes for a relaxing and refreshing finish.
